Fried Fish Recipe

2-3 whole Croaker fish (or your preferred type of fish)

½ cup fresh cilantro 

3-4 pieces of string onions 

4 cloves garlic

1 tsp salt

½ tsp black pepper 

½ cup cornstarch 

1-2 cups vegetable oil (for frying)

How to make it: 

First, blend the cilantro, garlic and string onions into a puree. Then set it on the side. 

Clean and cut the fish in small pieces or your preferred size. 

Add the salt, black pepper and the blended green seasoning. Massage and coat each piece of fish with the green seasoning.

Cover and allow this to marinade for at least 30 minutes. 

After 30 minutes, take out each piece of fish and rest them on a plate for 5 minutes to drain out any extra water. 

While the fish is draining, heat up the oil on a medium heat. 

On a small plate, add the cornstarch and set on the side. 

Once the oil is hot, take the fish and lightly pat them in the cornstarch. Then, slowly drop the fish into the hot oil. Be careful not to splash the oil on yourself.

Fry for about 10 minutes. 5 minutes on each side. 

Enjoy with Kenkey with shito and red pepper sauce on the side.
