Extra Moist Banana Muffins

If you have overly ripen banana laying around, do not throw them away, make muffins out of them. This is an easy banana muffin recipe for you to try. You might already have the ingredients in your kitchen.

Ingredients:

3 Extra ripe bananas 

½ Cup brown sugar

2  Large eggs

8 Tbsp butter (melted) 

1 Tsp vanilla extract 

2 Cups all purpose flour

½ Tsp baking powder 

½ baking soda

½ Tsp salt 

How to make it: 

Preheat your oven to 350 degrees F.

Peel and mash the bananas using a fork and a plate.

In a medium mixing bowl, add the mashed bananas and whisk in all the wet ingredients one at a time. The brown sugar, melted butter, eggs and vanilla extract. 

Then sift and add the dry ingredients. The flour, baking powder, baking soda and salt to the wet ingredients. 

Mix everything together very slowly and stop as soon as the flour is well incorporated. 

Place a muffin liner inside a muffin pan. Then scoop the batter into each muffin liner. Fill halfway of the cups. Do not overfill. 

Turn the temperature down to 325 degrees F and bake the muffins for 20 minutes. 

After 20 minutes, take muffins out of the oven and transfer them onto a rack to cool.
